&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;span style="font-family:arial;"&gt;&lt;div&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips. Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. Try this hot and spicy version and add some zest to your plate.&lt;br /&gt;INGREDIENTS&lt;br /&gt;3 tablespoons shallots, finely diced&lt;br /&gt;3 tablespoons olive oil&lt;br /&gt;2 teaspoons garlic, chopped&lt;br /&gt;2 to 3 tablespoons hot bean paste (miso) or chili bean sauce&lt;br /&gt;1/2 teaspoon ground cumin&lt;br /&gt;1 cup mango juice or apricot juice or orange juice&lt;br /&gt;4 tablespoons rice wine&lt;br /&gt;Salt and freshly ground pepper&lt;br /&gt;6 pork chops, bone in, about 10 ounces each&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;In a medium pan, sauté shallots in oil for 2 minutes. Add garlic and sauté 1 minute more. Add hot bean paste, cumin, mango juice, rice wine, and salt and pepper to taste. Bring to a boil. Remove from heat and chill. Place pork chops in a large resealable plastic bag; pour chilled marinade over chops and marinate in refrigerator for 4 hours, turning occasionally to distribute marinade. Remove chops from marinade, reserving marinade. Pour reserved marinade into a small saucepan and bring to a boil. Boil one minute; remove from heat.&lt;br /&gt;Place chops in centre of cooking grate. Grill for 16 minutes or until juices run clear, turning once halfway through grilling time and occasionally basting with marinade. Proof for ten minutes, or until frothy. Mix in the salt, olive oil, and flour until dough pulls away from the sides of the bowl. Turn onto a lightly floured surface. Knead until smooth, about 8 minutes. Place dough in a well oiled bowl, and cover with a damp cloth. Set aside to rise until doubled, about 1 hour. Punch down, and knead in garlic and basil. Set aside to rise for 1 more hour, or until doubled again.&lt;br /&gt;Preheat grill for high heat. Heat olive oil with garlic for 30 seconds in the microwave. Set aside. Punch down dough, and divide in half. Form each half into an oblong shape 3/8 to 1/2 inch thick.&lt;br /&gt;Brush grill grate with garlic flavored olive oil. Carefully place one piece of dough on hot grill. The dough will begin to puff almost immediately. When the bottom crust has lightly browned, turn the dough over using two spatulas. Working quickly, brush oil over crust, and then brush with 2 tablespoons tomato sauce. Arrange 1/2 cup chopped tomatoes, 1/8 cup sliced black olives, and 1/8 cup roasted red peppers over crust. Sprinkle with 1 cup cheese and 2 tablespoons basil. Close the lid, and cook until the cheese melts. Cut the monkfish into 1-inch (2.5 centimeter) dice and add to a bowl with the ciabatta, ripped up into similar-sized pieces. Keeping the top 2 inches (5 centimeters) of rosemary leaves, run your thumb and forefinger down the length of the stalk, removing all the leaves. Throw these into a pestle and mortar and bash up with the garlic. Then stir in 5 or 6 tablespoons of extra-virgin olive oil. Pour this over your monkfish and bread and toss around. Now begin to skewer the kebabs. At an angle, slice the tip off the rosemary stalks, so they are sharp. Put a piece of monkfish on first, then bread, and repeat until you have about 3 pieces of monkfish and about 3 pieces of bread on each kebab and lightly season. Loosely wrap 3 pieces of pancetta round each kebab, weaving it in and around the fish and the bread. Place the kebabs on a roasting tray, sprinkle with any leftover oil and rosemary, and bake in the preheated oven for 15 to 20 minutes, until the bread is crisp and golden. Drizzle a little balsamic vinegar over each piece of monkfish, then a little extra olive oil and any juice from the tray. Thread shrimp onto skewers. Place in a 13X9" baking dish.&lt;br /&gt;Whisk together olive oil and next 5 ingredients in a a bowl; pour over shrimp. Cover and chill for 20 minutes. Remove shrimp from marinade and discard marinade.&lt;br /&gt;Preheat grill to 350 to 400. Grill shrimp, covered with grill lid, 2-3 minutes on each side or just until shrimp are pink. Mound the mixture on the flat bread, spreading to the edges. Close the grill and give it a minute or two, When it is melted, it's done.
